These rainbow cupcakes from scratch make for a psychedelic and delicious treat! Kids will love the way they look and adults will love the moist texture and delicious flavour. Perfect for birthday parties and cake sales, decorate these with a vanilla buttercream icing and you won't go wrong!

IngredientsMakes: 18 to 24 rainbow cupcakes

  • 350g plain flour
  • 4 teaspoons baking powder
  • 3/4 teaspoon salt
  • 4 egg whites
  • 300g caster sugar
  • 170g unsalted butter, softened
  • 350ml milk
  • 1 teaspoon vanilla extract
  • rainbow food colourings (red, orange, yellow, blue, green, purple)

MethodPrep:40min ›Cook:20min ›Ready in:1hr

  1. Preheat the oven to 180 C / Gas 4. Line a cupcake tin with paper cases.
  2. Sift the flour, baking powder and salt together three times. Set aside.
  3. In a separate bowl, beat egg whites until foamy. Add 100g of the sugar gradually, and continue beating only till soft peaks form.
  4. Beat butter until smooth. Gradually add remaining sugar, and cream together until light and fluffy. Add sifted ingredients alternately with milk a small amount at a time, beating after each addition until smooth. Mix in vanilla. Add egg whites, and mix well.
  5. Set out six bowls. Add a bit of food colouring to the bowls, using a different colour in each bowl. Divide the cake mixture evenly between the bowls. Stir each mixture till the colouring is evenly distributed throughout the cake mixture.
  6. Using a tablespoon, spoon the first coloured mixture into the bottom of each paper case in the prepared tin. Gently spread out to the edge of the case to create an even layer. Repeat with remaining coloured mixtures.
  7. Bake in the preheated oven for about 20 minutes, or till a skewer inserted into the centre of a cupcake comes out clean. Cool slightly in tin, then remove to cool completely on wire racks. Decorate as desired with icing, or enjoy plain!

Tips

Sifting ensures a lighter texture, so don't skip this step! Paste food colouring works best in this recipe, but you can try liquid or gel colours, too.

Somewhere Over the Rainbow Cupcakes

This was Dorothy really found in Kansas. Somewhere Over the Rainbow Cupcakes are fun cupcakes for kids, and a delicious trip back in time for adults. Whip some up, the whole family will love them!

If your kids aren&rsquot in love with coconut, substitute vanilla flavoring for the coconut extract in the cake and frosting.

Ingredients

  • 1 1 / 2 cup all-purpose flour
  • 1 3 / 4 teaspoon baking powder
  • 1 / 2 cup butter, softened
  • 1 cup granulated sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • 1 teaspoon coconut extract
  • 3 / 4 cup canned coconut milk (not cream of coconut)
  • Yellow, green, red, blue and purple liquid food color
  • 1 1 / 2 cup unsalted butter or margarine, softened
  • 6 cups powdered sugar
  • 1 dash of salt
  • 5 tablespoons milk
  • 1 / 2 teaspoon vanilla
  • 1 / 4 teaspoon coconut extract
  • Multicolored candy sprinkles, if desired

Instructions

  1. Preheat oven to 350 Degrees F. Place paper baking cup in each of 12 regular-size muffin cups.
  2. In small bowl, mix flour and baking powder set aside.
  3. In medium bowl, beat ½ cup butter and the granulated sugar with electric mixer on medium speed 2 minutes or until light and fluffy. Add eggs, 1 at time,
  4. Measure about ¾ cup batter into each of 5 small bowls. For yellow, stir about 6 drops yellow food color into batter in first bowl. Tint second bowl green, with 6 drops green food color third bowl red, with about 8 drops red food color fourth bowl blue, with about 10 drops blue food color and fifth bowl purple, with about 8 drops red food color and 3 drops blue food color.
  5. Spoon scant tablespoon of yellow batter into each cup smooth to edge of baking cup with back of spoon. Repeat with green, red, blue and purple batters (fill cups to ¾ full).
  6. Bake 18 to 22 minutes or until toothpick inserted in center of cupcake comes out clean. Cool 5 minutes remove from pan to cooling rack to cool.
  7. In large bowl, beat 1 ½ cups butter, the powdered sugar and salt with electric mixer on medium speed until light and fluffy. Beat in 4 tablespoons of the milk, ½ teaspoon vanilla and ¼ teaspoon coconut extract. Add remaining milk, 1 teaspoon at a time, until frosting is smooth and spreadable. Beat until fluffy.
  8. Pipe or frost about ¼ cup frosting onto each cupcake. Sprinkle with multicolored sprinkles.

If Using a Cake Mix
Substitute 1 box white cake mix for the Cupcakes above. Make cake mix as directed on box for cupcakes, and follow steps 3 and 4 as directed in recipe. For the frosting, substitute 1 container vanilla creamy ready-to-spread frosting mixed with ¼ teaspoon coconut extract. Bake and cool as directed on box. Frost and garnish as directed in recipe. 22 cupcakes

3) License Grant for Materials. You hereby grant to Prime Publishing and its Affiliates a worldwide, nonexclusive, royalty-free, perpetual right and license to (a) reproduce, distribute, transmit, publicly perform and publicly display the Materials, in whole or in part, in any manner and Media, (b) modify, adapt, translate and create derivative works from the Materials, in whole or in part, in any manner and Media, and (c) sublicense the foregoing rights, in whole or in part, to any third party, with or without a fee.

4) Removal of Materials. If you decide you would like to remove your Materials from the Service, you may provide written notice to Prime Publishing by either deleting the image through the Prime Publishing interface or by contacting Prime Publishing customer service, and Prime Publishing will remove such Materials from the Service within a reasonable period of time.

5) License for Name, Trademarks and Likenesses. You hereby grant to Prime Publishing, its Affiliates and sublicensees a nonexclusive, worldwide, royalty-free license to use all trademarks, trade names, and the names and likenesses of any individuals that appear in the Materials. You grant Prime Publishing, its Affiliates and sublicensees the right to use the name that you submit in connection with the Materials.

6) Specifications and Guidelines. You agree to submit Materials to us in accordance with all guidelines for use of the Service posted on the Prime Publishing web site or of which you are otherwise notified ("Guidelines"), as these Guidelines may be changed in the future.

7) Representations, Warranties and Indemnities. We expressly reserve the right to remove or not make available any Materials that we deem to be in violation of this Agreement, applicable laws or our community standards in our sole discretion. You! Anyone who is a registered and logged in user.

Please share images that will help other visitors. For example:

How long does it take to upload an image?

The time varies depending on the speed of your Internet connection and the size of the image file. For a 400KB image, for example, you should expect 2 to 4 minutes over a 56KB modem and under 1 minute for DSL or cable modem.

Assembling your Easy Rainbow Cupcakes Recipe is easy.

Gather all of your ingredients to allow for easy assembly.

Prepare for Frosting your rainbow cupcakes:

  • Dip your knife in hot water to make spreading easier
  • Never heat up your frosting as it might make it too thin. You want your icing to stay formed and not weepy. It’s much better to stir your frosting until it is the proper consistency.
  • If you don’t have any piping bags, no problem. Use a plastic ziploc baggie and snip off a corner. (scroll down to see the video)

Whether you choose to use piping bags, a knife and a tub of frosting or ziploc baggies, it’s all good. Use what you have!

  1. Cut the unicorn tails into desired length.
  2. Curve the unicorn tails
  3. Push the unicorn tails down into cupcake. Make sure to stay towards the middle and not get to close to the edge. This will help keep the rainbows sturdy and make sure they don’t come out.
  4. Add three marshmallowson both ends of the rainbow.
  5. Enjoy!

Rainbow Cupcakes Supplies

  • 2 pastry bags
  • extra large star piping tip
  • straight piping tip
  • small paintbrush

How to Make Rainbow Cupcakes

Bake your cupcakes and let them cool.

While the cupcakes are cooling make your frosting of choice.

Cut the tip off of your pastry bag, add in an extra-large star piping tip to the bag.

On a plate put drops of food coloring, then using a paintbrush paint a line of each gel food coloring starting at the inside tip going halfway up the bag, making sure you are going in the color order of the rainbow.

Fill the piping bag with your buttercream saving roughly 1/5th of the frosting in the mixing bowl to use later. I like using the Easy Way to Fill a pastry bag., it makes things so much easier.

Pipe the buttercream in a swirl on each cupcake. If you have never frosted cupcakes with a the swirl, be sure to check out How to create an icing Swirl.

Cut the tip off the second pastry bag and add the straight piping tip. Fill the bag with buttercream.

Pipe three small circles on the side of the cupcake and three small circles to the top of the cupcakes.

Cut the rainbow strips in half. Stick one side of the candy into each of the small dots of buttercream to create a rainbow shape.


Ingredients

  • 1 dozen pre-made strawberry cupcakes
  • Blue frosting
  • Rainbow sour candy strips
  • Candy eyes
  • Hot Tamales, sliced in halves or thirds

Ice cupcakes with blue frosting. Place edible candy eyes and two small pieces of Hot Tamales as the fish&rsquos mouth on the cupcake. Arrange rainbow strips vertically in rows, layering rows behind one another. Place one additional rainbow strip on the outer edge of cupcake to create a tail.


Funfetti Cupcakes

There are lots of reasons I love funfetti desserts. Not least of which is that I’m fairly certain it’s impossible to eat a piece of Funfetti cake, bundt cake or a cookie filled with confetti sprinkles without grinning from ear to ear. We even love Funfetti French Toast around here for birthday breakfasts!

I’ve been known to reach for a boxed mix from time to time, but it when it comes to funfetti cupcakes, I love them best when they’re homemade from scratch. This easy Funfetti cupcake recipe makes moist, fluffy vanilla cupcakes sprinkled with rainbow chips that look like confetti!

Not only are Funfetti cupcakes so much tastier when you make them from scratch, they take hardly any more effort than reaching for a mix.

What is funfetti?

In case you’ve never experienced the delight of eating a slice of funfetti cake, a funfetti cookie or a funfetti cupcake, let me fill you in: Funfetti (or confetti) cakes have colorful sprinkles (or mini rainbow chips) added right to the batter before baking.

As the cupcakes or cake bakes, the sprinkles melt a little into the white cake batter. The rainbow colored spots look like party confetti! I’ve tried lots of variations on confetti cupcakes and these are by far my favorite.

The white cake makes the confettti colors “pop” beautifully–and you can’t beat the taste of a good, moist vanilla cupcake piped with creamy frosting! These cupcakes are the perfect choice for a kid’s birthday party but I don’t know any adult who’s going to turn these down either.

Funfetti Cupcake Recipe

Here’s a bit of information about each of the ingredients needed to make these adorable confetti cupcakes from scratch.

Cake Ingredients

  • Cake flourThis gives the cupcakes a light, delicate texture. If needed, you can substitute with half the amount of all purpose flour, removing two tablespoons of flour and replacing them with corn starch.
  • Buttermilk –Or use a homemade buttermilk substitute.
  • Eggs –Bring the eggs to room temperature for best results.
  • Sugar –standard granulated sugar.
  • Butter –Melted and slightly cooled. Salted or unsalted is fine, based on your preference.
  • SprinklesI used these rainbow chip sprinkles. Any kind of multicolored jimmies will work well here. Don’t use nonpareils! They’ll bleed color immediately making the cupcakes look dingy and unappetizing.
  • Baking soda –always check the date to make sure it’s fresh.
  • Baking powder – just like with baking soda, freshness matters!
  • Vanilla –pure vanilla extract is always the way to go, but a clear vanilla flavoring can be used.
  • Salt– just a touch helps balance the sweetness.

Frosting Ingredients

To decorate these cupcakes, I used a homemade buttercream style frosting with these ingredients:

  • Butter –Softened for easier whipping. Once again, salted or unsalted is fine, use what’s on hand.
  • Powdered sugar –also called confectioners sugar. A quick sift will create smooth and creamy frosting.
  • Heavy whipping cream –if you must, you can replace with half and half or whole milk, but whipping cream is preferred!
  • Vanilla –pure vanilla extract is preferred for taste, but a clear vanilla flavoring will give you a bright, white frosting.
  • Salt –just a touch, helps balance the sweetness.
  • Sprinkles –For decorating the frosted cupcakes. I used more rainbow jimmies, but you can use any sprinkles that strike your fancy here.

To make the cupcakes:

  1. Make the batter: Whisk together cake flour, baking soda, baking powder and salt in a bowl and set aside. In a separate bowl whisk together eggs and vanilla until well blended. Whisk in sugar until well blended. Slowly whisk in butter and mix well to combine. Add ½ of the dry mixture to the wet mixture and mix until combined. Mix in the buttermilk and stir until combined. Mix in remaining dry mixture and mix just until combined.
  2. Add the sprinkles: Gently fold in sprinkles and mix just until combined.
  3. Bake: Scoop batter into prepared cupcake liners about 2/3 of the way full. Bake for 18-22 minutes or until a toothpick inserted into the center comes out clean. Remove from oven and allow to completely cool prior to frosting.

How to make the Funfetti frosting:

1. Beat: With a mixer, beat the butter until light and creamy, approximately 3 minutes. Add powdered sugar to the butter mixture and mix until combined. Add in heavy cream and vanilla extract and once combined mix for 2-3 minutes on high speed.

2. Adjust to desired consistency: If frosting seems too thin, add more powdered sugar, 1 tablespoon at a time. If frosting seems too thick, add more heavy cream, 1 teaspoon at a time, until desired consistency is reached.

3. Decorate the cupcakes: Spread or pipe frosting onto cooled cupcakes. Garnish with more sprinkles and enjoy!

Indulge your sweet tooth with these adorable Rainbow Cupcakes.

They are perfect for a birthday party and are very easy to make, even for the novice baker!

What You’ll Need:

Below is what you will need to make the rainbow cupcakes and to decorate them.

Yields: One dozen cupcakes

For the cupcakes:

  • 1.5 cups all-purpose flour
  • ¾ tsp baking powder
  • Pinch of salt
  • ¾ cup softened butter
  • ¾ cup granulated sugar
  • 2 eggs, large
  • ½ cup + 2 tbsp milk
  • Blue gel food colouring

For the buttercream and decorations:

  • 2 sticks butter, softened
  • 4 cups confectioners’ sugar
  • 2-3 tbsp milk
  • Red, orange, yellow, green, blue, purple fondant (about 2-4 oz. of each colour)

Let’s Make Rainbow Cupcakes

Follow along with the step-by-step process photos and then find the printable recipe below!

Making The Cupcakes:


Gather all your ingredients to make your rainbow cupcakes.

Line a muffin pan with cupcake paper liners. Preheat oven to 350 degrees F.

In a small bowl, sift together dry ingredients: flour, baking powder and salt.


Using an electric mixer, beat together butter, sugar and eggs.

Alternate adding milk and dry ingredients into your wet ingredients. Start and finish with dry ingredients.


Once the batter is formed, add a small drop of blue gel food colouring and beat until completely tinted.

Add batter into each section of your muffin pan, filling it up about 2/3 of the way.

Bake for about 15 minutes or until a toothpick comes out clean when inserted into the middle of a cupcake.

Allow the cupcakes to cool completely on a wire rack.

Decorating The Rainbow Cupcakes:


Next, it is time to create your rainbows out of fondant.


Take a small piece of your red fondant and roll it out so that it’s a strip about 5 inches long and ½ inch thick.

Arch the strip and then do the same with a small piece of orange fondant.


Continue to do this with the rest of the colours, placing one beneath the other: red, orange, yellow, green, blue purple.

In between each fondant strip, you may brush some water so that the fondant strips stick together.


Trim your fondant rainbows where you see fit.


Cut each fondant rainbow in half.


Using an electric mixer, beat together butter, confectioners’ sugar and milk.

Beat on medium and gradually increase to high.

Once the buttercream is formed, scoop into a piping bag with Wilton icing tip #12.

Frost each cupcake by adding small dollops all over the top.

This will make the buttercream look like fluffy clouds.


Insert one fondant half-rainbow into each frosted cupcake and voila, you have yourself some adorable rainbow cupcakes!


Rainbow Cupcakes

Whisk together milk, eggs, oil and vanilla paste in a medium bowl. Pour into the flour mixture gradually on slow speed than gradually increase it to medium speed and whisk until all ingredients have combined together well. Ensure to scrape down the sides.

Once all combined evenly divide the mixtures into 5 bowls. Colour each bowl of mixture with food colouring (each bowl a different colour). Divide the mixtures into 5 separate piping bags. Pipe alternative coloured mixture into cases until ¾ full

Bake in the oven for 25 minutes or until the skewer inserted into the centre and comes out clear out. Then remove and allow cool down on wire rack

Push an apple core remover half way through the centre of each cupcake. Disregard (or eat) the removed pieces. Fill the centre with the sprinkles to the top.

Using an electric mixer with a paddle attachment, beat the butter in the bowl till pale. Gradually add in the icing sugar mixture and milk, beating constantly until combined. Add in the essence for flavouring.

Divide the butter cream into 5 small bowls add in the colour into each one and mix well. Transfer the buttercreams into 5 different piping bags.

Place cling wrap to 30 cm square wrap, pipe the buttercreams close together 20cm length ways leaving 5 cm on each side. Roll plastic wrap up from the long side to create log. Twist both ends to enclose, snip one end off the log. Make one more log.


Decorations

Although these rainbow cupcakes are quite festive without any decorations – the more, the better…right?! Check out a few of my favorite decorations below. You could even play around with the cupcake batter colors and only use 2 or 3 of your favorites instead of 5!

  • Frosting: My favorite frosting for these cupcakes is buttercream. You could even make rainbow buttercream for even more pizzazz. Cream cheese frosting tastes delicious as well!
  • Sprinkles: We love to use rainbow sprinkles! The colorful sprinkles are a fun contrast on top of the white buttercream frosting.
  • Edible glitter: Using edible glitter adds such a fun touch and looks a little more fancy. :)
  • Cupcake toppers: Cupcake toppers are perfect to add for a celebration such as a birthday or holiday party. A unicorn or rainbow cupcake topper would be fun.
