Tray Pie - Quick Pie is an excellent recipe, which I highly recommend and I am sure it will be a great success to all who will taste it! With a very fast dough, which you can easily mix simple with a spoon, without the need for a mixer and stuffing, the pie is ideal for the whole family!

Everything you need to know about the recipe: From the given quantities comes a large pie tray, a 35x25 cm tray, respectively about 10-12 servings. If you want to make a smaller quantity, simply halve the ingredients and bake the pie in a smaller tray, 20x20cm or a round tray with a diameter of 32 cm.

You can use fresh yeast (a 40-50g cube) or dry yeast (a 7-10g sachet).

In the dough you can add herbs, chopped spinach, onions or a tablespoon of concentrated tomato paste for extra flavor. to harden them before. You can also add more types of cheese or sausages, but also cooked meat, such as leftovers from last night's steak.

It is an economical pie, very easy to prepare and that allows you to "recycle" the ingredients you already have. It is kept very well for 3-4 days in the cold, wrapped in food foil. You can heat it a little before serving, especially if it has a cheese filling.

I have known this recipe for a long time, but I hesitated to prepare it. To see that I also have a quality that sometimes turns into a defect! It's true, I'm trying, as much as possible, to limit the disaster. The moment I saw my godmother "improvising" this pie, admiring the result, on a New Year's Eve - which promises to be semi-missed - I couldn't resist. I even discovered that it is a very easy way to prepare a pie and I made a version with apples and one with pumpkin - according to the same system.

This recipe is for Carbohydrate Day (dinner) from the Rina Diet - 90 Day Diet.

You need:
700 g of fresh cottage cheese
1 packet of frozen pie sheets
8 tablespoons brown sugar
3 eggs husband
1 handful of raisins (optional)
vanilla, in what form you want (emergency and vanilla sugar!)
1 pinch of salt
100 ml oil (approximately)
a little lime peel (optional)
for drowning:
250 ml milk
1 or
1 tablespoon brown sugar

We turn on the oven, let it be hot. In a bowl put the cheese, a pinch of salt and lime peel.

Break each egg separately, beat with a small whisk and add a little vanilla essence. Be careful, do not overdo it with vanilla. Mix in the cheese well. This is done with each of the 3 eggs, one at a time.

Place another sheet, which is greased with oil and another. Do not bathe in oil! Spread a quarter of the cheese composition on 2/3 of the surface of the sheets.

Press some rehydrated raisins and press 2 tablespoons of brown sugar. Leave about 2 cm of edge, so that the composition does not flow into the baking tray.

Start rolling the sheets from the end with the cheese, pressing lightly and evenly, forming a roll, taking care to press on the ends so that the cheese does not come out when baking. Place the roll in the baking tray greased with an oil brush and grease the roll on top.

When the 4 rolls are filled, put the tray in the oven, over medium heat for about 20 minutes.
Beat the remaining egg with 1 tablespoon of brown sugar and add the milk. Remove the tray from the oven and pour the milk evenly into the tray.

Bake for at least another 10 minutes, browning the pie a little on top.

Allow to cool slightly and cut into pieces in the desired shapes. Then sprinkle with vanilla-flavored powdered sugar.
There will be no fear, do not put paper in the tray, do not stick if it is greased and if the composition does not flow. So you just have to be a little careful. Just a little!


Before mixing the ingredients, we must make sure that the cheese does not have a dice, so the dice must be drained well (those who do not like fresh cow's cheese can be replaced with ricotta cheese).

In a larger bowl place the fresh cheese, add the eggs, vanilla sugar, sugar and vanilla essence. Mix the whole composition well then add salt powder and raisins (as desired).

Before placing the pie in the pan, heat the oven to 180⁰C.

In an oven tray place baking paper then the first 4 sheets of puff pastry greased with oil, put the cheese mixture, then another 4 sheets greased with oil and composition until you finish the composition and puff pastry.

After finishing this stage, grease with oil and egg yolk and cut the pie according to your preferences.

Put in the hot oven for 50 minutes.
Before turning off the oven, check the pie in the middle with a toothpick to see if it is well cooked.

Quick Pie

Soak the raisins in rum or water with rum essence, about 1 hour.

Beat the yolks with 1/2 brown sugar until they become frothy, turn white, and the sugar has melted and the egg whites foam hard with the other 1/2 of the amount of brown sugar.

Separately, mix the yogurt, vanilla sugar, grated lemon peel, incorporate the rubbed yolks, then, first 1/3 of the amount of beaten egg whites and finally, the rest, mixing with a spatula, very lightly, by turning from the bottom up.

Wallpaper a large stove tray with baking paper, in which you place 2-3 piles of pie on top of each other, without greasing them, covering the edges of the tray. Pour 2-3 tablespoons of the filling, so that after leveling you are about a finger thick and sprinkle well drained raisins.

Put another 2-3 sheets of pie to cover only the filling, another layer of filling, also a finger thick, raisins. Continue the layers until you finish the ingredients, taking into account that the last layer must be of the filling over which you generously sprinkle raisins.

Put the tray in the preheated oven, for about 40-50 minutes, at 170-180 degrees or until the cake is baked, the top layer firm and nicely browned.

Leave to cool on a grill, powder with powdered sugar (optional), portion and serve with gusto.
