    In a mixing bowl, stir together the sugar cookie mix and the flour. (NOTE: The package recipe says to add 1 tablespoon of flour, but with the addition of the wet food coloring, I added an extra tablespoon to ensure the light bulbs would look like light bulbs once baked.) Add the butter and mix to combine. Crack the egg, pour the egg into the bowl and mix until a soft dough forms, saving the egg shell for later.

    Pinch off about 1/4 cup of the dough. Set it aside. Divide the remaining dough in half.

    Color one half of the dough red and the other half green, using the food coloring.

    Scoop out 14 tablespoonfuls of the red dough and 14 of the green dough. Roll into balls then shape into Christmas lights (like teardrops). Set on parchment paper lined baking sheets.

    Divide the remaining uncolored dough into 28 small pieces. Roll the pieces into balls then into short tubes. Use the tiny amount of egg white that is still inside the egg shell as glue. Use a pastry brush or your finger to brush a bit of egg white one end of each tube of dough and press them onto the wider ends of the colored light bulb shaped dough.

    Refrigerate the light bulbs for 30 minutes.

    Preheat your oven to 375°F (350°F for dark or nonstick cookie sheets.) Bake cookies, one tray at a time, for 10-12 minutes. Allow to cool completely.

    Decorate your Christmas Light Cookies by filling a disposable pastry bag or a zip top bag with the chocolate frosting. Snip off the end of the bag and pipe a small dot of frosting onto the back of each candy eye. Press the eyes onto your light bulbs. Pipe on silly smiles. Pipe grooves onto the base of each light bulb.

    To dress up your platter of cookies, arrange your light bulb cookies along a strand of ribbon or a long licorice lace. Store in an airtight container for up to a week.

Sift flour, baking powder, and salt together, set aside. In a large bowl, cream together the margarine and sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla. Gradually blend in the sifted ingredients until fully absorbed. Cover dough, and chill for 2 hours.

Preheat oven to 400 degrees F (200 degrees C). Grease cookie sheets. On a clean floured surface, roll out small portions of chilled dough to 1/4 inch thickness. Cut out shapes using cookie cutters.

Bake 6 to 8 minutes in the preheated oven, or until edges are barely brown. Remove from cookie sheets to cool on wire racks.


Joulutorttu: Flaky Pastry Meets Robust Jam

Joulutorttu (pronounced jo-lu-tort-tu), are star or windmill-shaped cookies that boast the crisp crunch of a flaky pastry and the smooth sweetness of a dollop of jam.

Traditionally these Christmas tarts are made with a ricotta pastry and filled with a prune jam.

The ricotta in the pastry gives them a nice lightness, without being too rich or heavy. And, while prune jam might not sound all that appetizing, it actually adds a deep sweetness to the cookie that is the perfect contrast to the flaky pastry.

  • 2 eggs
  • 1 ¼ cups white sugar
  • 1 cup coarsely chopped walnuts
  • 1 cup chopped dates
  • 1 teaspoon vanilla extract
  • 1 cup flaked coconut
  • ¼ teaspoon almond extract

Preheat oven to 350 degrees F (175 degrees C).

In a mixing bowl, beat eggs with an electric mixer. Add 1 cup sugar and beat well. Blend in nuts, dates, vanilla, coconut and almond extract. Transfer mixture to an ungreased 2 quart casserole.

Bake in a preheated 350 degrees F (175 degrees C) oven for 30 minutes. Remove the mixture from the oven while still hot and beat well with a wooden spoon. Cool until the mixture can be handled then form into small balls and roll in the 1/4 cup remaining sugar.

Merry Christmas Cookies Recipe

Merry Christmas Cookies originally came from an older 1960’s Betty Crocker Cookbook. Christmas would hardly seem like Christmas without fancifully shaped and decorated cookies. Decorated cookies are thought to have originated in pre-Christian times as offerings to various gods. You and your children will love these Merry Christmas Cookies. The honey in this recipe makes these cookies melt in your mouth. This has always been a favorite cookie of my children. They are now adults, but we still make these Christmas Cookies every year.

Every Christmas, my daughters and I carry on the family tradition by spending a day cooking baking. New traditions include, Bing Crosby’s Christmas songs, lunch, and pre-made cookie dough that we make at home so we’re not lugging all the ingredients around. We each take a few recipes and during the week mix up the love, and store the dough in ziploc bags. That way the only task is baking and decorating when we get together. Much easier this way!

Getting our ingredients ready for our family’s Christmas Cooking Making Day. We made these Merry Christmas Cookies, plus Spritz Cookies, Chocolate Chip Cookies, Thumbprint Cookies, and Hazelnut Shortbread Cookies.


Recipe Summary

  • 4 cups unbleached all-purpose flour, plus more for dusting
  • 1 teaspoon baking powder
  • 1/2 teaspoon kosher salt
  • 2 sticks unsalted butter, room temperature
  • 2 cups sugar
  • 2 large eggs, room temperature
  • 2 teaspoons pure vanilla extract
  • White chocolate, melted and cooled slightly, for decorating
  • Small red and white candies, such as pearls, for decorating

In a bowl, whisk together flour, baking powder, and salt. In another bowl, beat butter with sugar until pale and fluffy, about 2 minutes. Beat in eggs and vanilla. Add flour mixture, beating just until combined. Divide dough in half, transfer each to plastic wrap, form into disks, wrap tightly, and refrigerate until firm, at least 2 hours and up to 3 days (or freeze up to 1 month).

Preheat oven to 325 degrees, with racks in upper and lower thirds. Let 1 disk of dough stand at room temperature until soft enough to roll, about 10 minutes. On a lightly floured work surface, roll out to a scant 1/4 inch thick. Stamp out tree shapes with an approximately 4-inch-tall cookie cutter, transferring cutouts to parchment-lined baking sheets as you work. Use a star-shaped aspic cutter to stamp out tree toppers from dough scraps. Repeat with remaining disk of dough. Freeze cutouts until firm, about 15 minutes.

Bake, rotating rack positions halfway through, until cookies are set and edges turn golden, 15 to 18 minutes. Let cool on sheets 5 minutes, then transfer to wire racks let cool completely.

Transfer melted chocolate to a pastry bag fitted with a small, plain tip, such as Ateco #2 (or use a small freezer bag, and snip the tiniest possible hole in one corner). Starting at top of each tree, drizzle chocolate in a random back-and-forth pattern, then adhere candies intermittently to mimic string lights. Pipe a small dot of chocolate at very top of tree, and adhere a cookie star. Let stand at room temperature until chocolate sets, about 4 hours or refrigerate just until set, about 15 minutes. (Do not keep cookies in refrigerator.) Store in an airtight container at room temperature, between sheets of parchment, up to 1 week.
